How to make southern style “soul food” collard greens with smoked turkey tail

Soul Food Collard Greens Recipe

Place meat in a pot of water, make sure meat is covered in water. Cook for 1 hour or until almost tender

To clean collard greens….. soak them in a bowl of salt water.

After an hour, rub the collard greens together and rinse them off with cool water.

Remove stem in the middle…. chop half of each stem into small pieces, throw the rest out. Chop up collard greens

Chop up 1 green pepper, 1 red bell pepper, and 1 large onion into small pieces

Place a big pot over high medium heat

Add old chicken oil (if you save your frying oil) and place 1/4 cup of it in pot

Add chopped onions, peppers, and collard greens to the pot

Fry until greens have shrunk and turned forrest green (stir constantly to avoid burning greens

Turn fire off

Season with 2 TBS OF MINCED GARLIC, 2tbs of onion powder, 2 tbs of seasoning salt or salt, 1/4 cup of sugar, 1 tsp of black pepper, 1 tsp of red crushed peppers, 1/2 cup of apple cider vinegar

Add 2 sticks of butter

Chop up tender smoked turkey meat or ham hocks meat into small pieces

Add that to pot along with the remaining water it cooked in

Add chicken broth and water to greens as well until greens are covered in liquid

Turn fire on medium heat and cook until greens are done, approximately 1 1/2 hours

Afterwards, give it a taste test and add more seasonings til you reach your desired taste
